This is a technique that goes way back, and I'm always surprised that more camp cooks aren't aware of it.

When prepping a chicken, try this. First butterfly or spatchcock it. This is the easiest way to assure even cooking.

Then prepare a compound butter and spread it all over the flesh, under the skin.

Any butter you prefer will work. Garlic is nice, for instance. We prefer an anchovy butter ourselves. Hotel d'Hote butter would work well too.

No matter what compound butter you use, the result is a moist, flavorsome chicken, with crisp skin.
