The last 2-3 years it has sorta become a tradition to smoke up a ribeye roast for Christmas Eve. So, I did one this year an eight pounder. I did it on the rotisserie on the smoker. Man it is simply out of this world good.

The ribeye roast.

With the magic slather to go in the fridge for 24 or 48 hours.

Raining, of course. The rotisserie on the smoker chugging away.

My Bride sets a nice table. Its a long farm table and she does it up good.

Toot made the star (she loves to do crafts) hanging over the table out of card stock paper.

Pulled it at 138 and resting.

Made some horseradish sauce to go with it.

It was a good time with family and good chow. We had a great Christmas day today. I am blessed.Hope you all had the merriest of Christmases. All the best.

Truly amazing! I have done many rib-eye roasts, but never smoked one. I might have to give that a try! Thumbs Up
